Golden Gouda Mushroom Soup
Ingredients
o ½ cup butter
o ½ cup all purpose flour
o ½ tsp pepper
o ½ tsp ground allspice
o 1 carton (32 oz) chicken broth
o 1 cup milk
o ½ cup heavy whipping cream
o ½ pound sliced fresh mushrooms
o 3 garlic cloves, minced
o 2 cups shredded smoked Gouda cheese
o Chives and smoked paprika for garnish
Directions
1. In a large saucepan, melt butter. Stir in the flour, pepper, and allspice until smooth.
2. Gradually add in broth, cream, and milk. Bring to a boil.
3. Add mushrooms and garlic. Reduce heat.
4. Simmer 5-6 minutes or until mushrooms are tender.
5. Add cheese. Cook and stir until melted.
6. Garnish with chives and paprika if desired.
