Cottage Cheese Buffalo Chicken Dip
Ingredients
2 cups low-fat cottage cheese
½ cup hot sauce
2 cups chicken breast cooked, shredded, and chopped
1 cup sharp cheddar cheese, shredded
1 teaspoon garlic powder
½ cup green onions, chopped
¼ cup blue cheese crumbles (optional)
Instructions
1. Preheat oven to 350˚F.
2. Add the cottage cheese and hot sauce to a blender or food processor. Blend on high speed until the cottage cheese is completely smooth. Scrape the sides if needed.
3. Transfer the cottage cheese mixture to a medium mixing bowl. Stir in the shredded chicken, shredded cheddar cheese, and garlic powder. Mix until well combined.
4. Transfer the mixture to a greased 8 x 8-inch baking dish or 9-inch pie plate. Bake the mixture in the preheated oven for 20 to 25 minutes, or until the dip is heated through.
5. Stir well. Top with sliced green onions and blue cheese (optional). Serve hot with your choice of veggies, crackers, or tortilla chips.
