Broccoli Cheddar Soup

Ingredients:
- 1 Tbsp butter
- ½ onion, chopped
- ¼ cup melted butter
- ¼ cup flour
- 2 cups low-fat milk
- 2 cups chicken stock
- 1½ cups coarsely chopped broccoli florets
- 1 cup matchstick-cut carrots
- 1 stalk celery, thinly sliced
- 2 ½ cups shredded sharp Cheddar cheese
Directions
1. Melt 1 Tbsp butter in a skillet over medium-high heat. Sauté onion in hot butter until translucent.
2. Whisk ¼ cup melted butter and flour together in a large saucepan over medium heat. Continue to whisk and cook, adding 1 to 2 Tbsp milk.
3. Pour the remaining milk into the flour mixture, whisking constantly. Stir in chicken stock and bring to a simmer. Cook for about 20 minutes until the mixture thickens.
4. Add broccoli, carrots, sautéed onion, and celery to the broth mix. Simmer for 20 minutes or until vegetables are tender.
5. Stir cheddar cheese into soup until the cheese melts. Season with salt and pepper to taste and enjoy.
